I love an easy recipe AND the fewer the ingredients the better. Perhaps, you even have these ingredients in your pantry right now. You are going to love these One Bowl Chocolate Muffins!

With only two ingredients you will have these mixed up and noshing on them in no time at all. My family has a hard time letting them cool off enough to handle. Dare I say on the healthier side too?

Do you have a can of pumpkin? How about a cake mix?

If you answer yes, then you are ready…opps! You need a bowl. Now, you are ready.

If you are not a fan of pumpkin not to worry, you won’t taste it. I just gives you the moistness that it needs without adding eggs and oil.

Just throw everything in a bowl and give it a quick mix. That’s it! Plus, did I tell you it’s only two ingredients?! How many times am I going to say that?

Yep, only two unless you NEED a handful of chocolate chips thrown in…which my husband thinks the worlds problems can be fixed with a handful of chocolate.

One more thing…you can use any kind of cake mix that you like. I have made these with yellow and spice cake mix…just as yummy! There is seriously no way you can mess these up. Drop me a comment or ask a question…I’m happy to hear from you!

One Bowl Chocolate Muffins

Ingredients

  • 1 Box Cake Mix - any flavor
  • 1 15 ounce can Pumpkin (I used Trader Joe's Organic - any will work)
  • 1 Cup Chocolate Chips - Optional (nutrition is calculated with them included)

Instructions

  1. Stir your cake mix and pumpkin together until combined - just keep stirring it will come together, trust me. It will be thick.
  2. Once combined, add your chocolate chips if using.
  3. Give it another good stir.
  4. Divide into 12 muffin cups or muffin pan coated with a little cooking spray.
  5. Bake at 350 degrees for 30 - 35 minutes depending on your oven.
  6. Check for doneness when a toothpick inserted in the middle comes out clean.
  7. Cool and Enjoy!
