Hi guys! I am really excited to share with you about a new cookbook that I bought this week. The link to purchase it will be at the bottom of this post.

I have followed this lovely lady (blogger Katie Farrell) for sometime now and tried a few recipes here and there. Lately, I am feeling the effects of getting close to 50 (mostly mental) and decided that I want to try this “clean eating” thing.

I have been making one of her dinner dishes for the last three nights and eating a big salad for lunch each day. Starting the day out with three eggs and my cup of coffee.

Now let me tell you that I have been having headaches for the last month everyday! Not fun at all. Trying not to take many meds for it because that’s not good for you. I realized last night after dinner that I have not had a headache for the last three days! Coincidence? I am thinking not.

I have not had any refined sugar (using organic coconut sugar) and I think this has made the BIG difference. My stomach doesn’t feel all bloated and the family is LOVING every meal. That is huge for me.

I will share some pictures with you from my kitchen. Seriously, easy! My goal is to make it seven days in a row and then go from there. I will let you know how it’s going.

Strawberry Coffee Cake. Perfect timing for this recipe with fresh strawberries coming out. I enjoyed this even better after it had been in the refrigerator for a while and was nice and cold. Great with your eggs for a protein packed breakfast.

One of the easiest recipes ever! Sweet and Sour Crock Pot Chicken. Put it all in and “fugget about it!” Leftovers are amazing on top of a big salad for lunch. I love recipes that make enough for the next day.

Fresh veggies are added an hour before you are ready to eat. I cut them all up and put them in a ziploc…then they were ready to go.

Look at all that protein and fresh veggies! We enjoyed ours on top of some organic brown rice. Quinoa would be a good choice, too. Did you know that as we get older our bodies need MORE protein? Will help you heal faster, too! I hope your mouth is watering and ready to try her recipes. Take the challenge with me! I don’t feel deprived or like I’m on a diet…it’s a lifestyle change.
