This Sausage and Veggie Egg Bake is a great breakfast casserole for any day of the week or serve it up for dinner. We love having breakfast for dinner! Mr. Tom likes to take a piece to work with him for a fast easy breakfast. Just pop it in the microwave and warm it up for a minute. You can portion this out in a microwaveable dish and have your breakfast ready for days.
First off, I am not a huge fan of breakfast casseroles when they are mushy or dry. I think know this is one that would even make Goldilocks happy. 🙂
What are the basic ingredients I need to make this recipe:
- eggs
- cheese
- your favorite veggies
- sausage
- milk
I made this a little bit lighter by not adding the cheese. My daughter has tummy issues with cheese and we didn’t even miss it. Loads of flavor! The white in the picture is the egg whites shining through. You could make half a recipe easily if you don’t need a large one altho’ it’s so good you won’t have any problem with it disappearing!
If you are not a fan of broccoli and/or peppers just change it up! Add your favorite veggies…the possibilities are endless. Also, with the sausage. How about some chicken sausage…asparagus, mushrooms, green bell pepper or squash. You get the idea. If cheese is not an issue for you throw that in there, too! Just be aware it changes the calorie count if that is something you are watching. I would love to say calories smalories, but they follow me everywhere I go like a puppy that can’t bear to be out of your sight.
I was feeling so happy with how yummy it turned out I took it one step further and added a bit of salsa and avocado. What would you add for a topping?
