*I’ve made this pumpkin bread twice in the last few weeks and decided I needed to update the pictures! It’s so good and it will sure to be your new favorite!

Easy, moist and addicting! One Bowl Pumpkin Bread. This is a recipe that my Mom made every year and I have such fond memories of the smell of pumpkin and spices throughout the house the day before Thanksgiving. She always made it the day before because it gets even better the second day. [We never can wait around here and someone is cutting into it a few minutes after I take it out of the oven]. Christmas music would be playing and my brother and I would be excited to play with cousins that we would see the next day. Sigh. Isn’t it funny how food can conjure up such memories!

 

 

 

What I love about this One Bowl Pumpkin Bread:

  • That you can mix it in ONE bowl.
  • It makes your house smell amazing!
  • It makes 3 loaves [you can easily adjust the recipe for one] seriously, it will disappear fast. You WANT all 3!
  • It freezes beautifully!
  • The smell of cinnamon and cloves will have you drooling in anticipation.
  • No mixer required.
  • It is EXTRA moist!
  • Tons of pumpkin flavor.
  • Easy to make.

 

 

 

 

This is made with chopped dates and they can be a bugger to find sometimes. If you can’t find them in your local grocery store here is a LINK to order them [they are a bit pricey here, but I wanted you to see what kind of dates to use] OR I have been known to buy big pitted dates and chop them up [messy but worth it…roll them in flour or sugar to keep them from clumping together] OR you can substitute them for chocolate chips. YES! Pumpkin and chocolate are amazing together. You might just want to forget about the dates and go right for the chocolate…your call!

 

 

This is how it will all come together. Don’t despair just keep on mixing! It is thick and sticky. You can use a hand mixer here if you would like [that’s how my mom did it], but I just mix it by hand. You can use a whisk or a big ol’ spoon.

Recently I discovered that if I line my pans with parchment paper it comes out super easy and clean up is a breeze!

One of my favorite ways to enjoy it is with a smear of butter and a cup of coffee. The longer this sits the better it tastes! The cloves and cinnamon meld together and get more intense. It also freezes really well!  After it has completely cooled wrap it in some parchment paper and then into a freezer zip-lock bag.

One Bowl Pumpkin Bread

Ingredients
  

  • 5 cups All purpose flour
  • 4 cups Sugar
  • 1 cup Vegetable Oil [no substitutions here, trust me]
  • 3 cups Pumpkin Puree [not pumpkin pie mix]
  • 1 8 ounce Package diced dates This is where you would replace with the chocolate chips...2 cups
  • 1 cup Chopped nuts I have never used these, but feel free to add them! Whatever your favorite is.
  • 1 teaspoon Cloves
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 4 teaspoons Baking Soda

Instructions
 

  • Add all the ingredients into a LARGE mixing bowl.
  • Use a whisk, hand mixer or large spoon and mix until all combined. Mixture will be stiff and sticky.
  • Divide into 3 loaf pans [a little spray of Pam wiped down with a paper napkin is good although not necessary...depends on your pan]
  • Bake at 350 for 55 to 70 minutes until a knife inserted comes out clean [again depending on your oven]
  • If your bread starts looking too brown lay a piece of foil over the top.
  • Let cool in pans for 10 minutes then remove onto cooling rack.
  • Cool for as long as you can and then ENJOY!
