Weekly Clean Eats – 4

Can you believe that we are in August already?

Can you believe that I have been thinking about where to put the Christmas trees this year?

It’s a sickness…I know. I need counseling. I mean I haven’t even been on vacation yet!

Here we are in the hottest month of the year, so I thought we could all use some recipes to keep us on track health wise all the while keeping our kitchens cool.

avacado chicken salad

This looks absolutely fabulous! I always forget about using lettuce in place of bread. If I am eating out I usually just take the bread out, but at home using lettuce is a great way to get a little more veggies in, too.

cloud bread

This bread has always intrigued me. I mean who wants to give up bread?! I have friends who have made it and say it is really good. If you have made it before, please let me know. I am interested in how long it will stay fresh and can I freeze it?

chicken burrito bowl

This looks like something I could eat almost everyday. How about wrapping a low carb whole wheat tortilla around some or scooping a cup on top of your favorite lettuce. Being cooked in the crock pot is a plus and we are still keeping the kitchen cool. WooHoo!

enchiladas

I seriously love Mexican food, but limit myself to once in a while for a weekend treat. If these are as good as the picture looks I can have my “fix” more often. Add a skinny margarita and we are good to go!

Here’s one more that you can wrap in a big piece of lettuce. Add some fresh fruit and there is a great summer dinner. Make some extra for lunch the next day. Okay…now I am hungry looking through all these recipes and need to decide which one to have tonight.
