Today is my second born’s 27th birthday.
As I sit here staring at my computer screen I can’t help but wonder where the time has gone. That and Lionel Ritchie on my headset making me feel a bit melancholy.
This little baby boy who was born three weeks early and weighed in at 5 lbs. 11 ounces has grown into a 6 foot tall man who is one of the most handsome men on the planet. 🙂 Smart as can be and continues to amaze me everyday.
He also is one of the healthiest eaters that I know so finding a “treat” for him on his special day can be quite of a challenge to say the least. So here is a muffin that is Caleb (my son) approved and good enough even for a birthday celebration.
Sweetened with bananas, honey and bursting with berries this is great anytime of the day. In the nutrition calculator it does not include the topping which is just a bit of oats, oatmeal flour, cinnamon and a teaspoon of butter that I added for the picture. 🙂 They are just as good without it!

Ingredients
- 1 1/4 cups fresh or frozen mixed berries
- 3 ripe medium bananas, mashed
- 2 tbsp. unsweetened applesauce
- 1 1/2 cups gluten free oat flour (you can use any flour, just may change the nutrition value)
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 2 tbsp. butter, softened
- 1/2 cup brown sugar unpacked
- 2 large egg whites
- 1 tsp. vanilla extract
- baking spray or muffin liners
Instructions
- Preheat oven to 350. Lightly spray muffin pan or use liners.
- In a large bowl, cream butter and sugar with electric mixer.
- Add egg whites, bananas, applesauce and vanilla. Beat at medium speed until thick.
- Add flour, baking soda and salt. Blend on low until combined, don't over mix.
- Fold in the berries.
- Divide into your muffin pan.
- Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
- Let cool and enjoy!
