Hey There Friends! How are things going? Yesterday it was almost 60 degrees out so that meant a long walk around the neighborhood. It felt wonderful to get some sun on my face and wave to the neighbors. It was a welcome relief after a weekend of all rain!

I’m working on some outfits for Thursday, but today I wanted to share my Instant Pot Tomato Meatball Soup recipe with you. It’s the perfect time to play around with some recipes since Lord knows it seems like all we have is time now days. Who knows you might find a new favorite!

I’m loving my pressure cooker and have the Power Cooker Plus version. They all work the same and they have so many cute colors out, since I got mine. I keep telling myself that I don’t NEED a teal colored one. Ha! I must admit that I was scared to death to use it in the beginning…I mean who hasn’t heard a horror story about a pressure cooker?!

After Mr. Tom read the directions (please don’t ask me to read directions!) and starting it up for me I have realized that this appliance is not out to kill me, but to make life easier and it has turned out some pretty awesome meals.

I love searching through Pinterest looking for recipes and it’s always exciting when I pull the lid off and it looks like the picture!

I am getting a little more adventurous and trying out my own concoctions. That’s what happened with this soup. I did start with a recipe, but after going to my pantry and realizing that I was severely lacking in the ingredients that it called for I just started improvising. Viola!
