Hi ladies, happy Thursday! I hope you are having a good week. Our weather is being so bipolar, it is sunny then snowing multiple times a day. It looks like it will be warming up towards the end of the week which makes me happy, I am so anxious to get back outside. Are you counting down the days until everything opens back up, like me. Target and Homegoods are first on my list to wander through and shop to my hearts content. What store will you go to first?

Well it has happened, the baking bug has finally hit me! Mr. Tom came across a recipe and after making it a few times I think I have it perfected, Scrumptious Peanut Butter Bread. I can’t believe I have never heard of this before. My house smells like peanut butter cookies! The original recipe came out of a cookbook from 1932 and after making a few tweaks and adding some chocolate chips (which is totally optional) it is really good. Enjoy with a cold glass of milk, coffee or a cup of tea.

The ingredients you will need:

  • flour
  • sugar
  • milk
  • peanut butter
  • baking powder & salt

Scrumptious Peanut Butter BreadScrumptious Peanut Butter BreadThis bread has a nice peanut butter flavor that will get a little stronger the next day and definitely better when it has cooled off. I used 2% milk for the first loaf and buttermilk in the second loaf. As I mentioned before, added some chocolate chips in the second loaf because everything is better with chocolate! I didn’t get a picture because Mr.Tom and my son devoured it. Ha!

Scrumptious Peanut Butter BreadI definitely think that you can use whatever milk you have on hand and possibly flour, also. I used all purpose flour in the first loaf and bread flour in the second. There was not a lot of difference…maybe a tad more tender in the second loaf, but I did use buttermilk and bread flour. I would have made a third loaf, but ran out of flour and you know how fun that can be trying to get at the store right now!

Scrumptious Peanut Butter Bread

Ingredients
  

  • 2 cups flour I've used all purpose or bread flour
  • 1/3 cup sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/3 cups milk I've used 2% or buttermilk
  • 1 cup creamy peanut butter
  • 1/2 cup chocolate chips (optional)

Instructions
 

  • Blend the flour, sugar, baking soda & salt together in a meduim sized mixing bowl.
  • Add milk & peanut butter. Mix just until incorporated. Don't over mix...a few lumps are okay. Add chocolate chips at this time if you are using them.
  • Grease (or cooking spray) a bread loaf pan.
  • Bake at 325 for up to 1 hour. Check after 40 minutes. Mine took about 45 minutes to be done. If it starts getting too brown tent with a piece of foil.
  • Let cool completely to let the flavors meld. Best the next day.
  • Enjoy!
