This is not an original with me, but I took it and added my own spin on it. Yes, I added the wine…don’t be too surprised.

This is a pretty easy recipe and doesn’t take too much time. Cutting up the pineapple was the longest part and that’s only because I was hungry and kept stopping to nibble on it.

If you have these ingredients on hand you are good to go:

  • Fresh pineapple ~ it’s gotta be fresh, the can just won’t do here
  • Shrimp ~ fresh or frozen
  • Rice
  • Onion
  • White Wine ~ optional

If you are not into shrimp you could also use chicken and I think it would be just as good.

It is a great summer dish and paired with a glass of cold Chardonnay it was perfect on a hot evening. Mr. Tom and I thoroughly enjoyed it and it was great the next day heated up for lunch.

One Pan Pineapple Shrimp Rice

One Pan Pineapple Shrimp Rice

Ingredients
  

  • 1/2 yellow onion
  • 1.5 lbs large shrimp; peeled and deveined and chopped into chunks
  • 1 1/2 cups fresh pineapple
  • 3 cups cooked brown rice
  • 1/2 cup white wine
  • 2 tsp olive oil
  • 1 tbsp butter
  • 1/4 cup fresh parsley
  • 1 tsp dried pepper flakes
  • salt & pepper to taste
  • 3 cloves garlic ; minced
  • 1 fresh jalapeno chopped
  • 1 tbsp soy sauce, or more to taste

Instructions
 

  • Cook brown rice according to package directions and set aside to cool.

  • Cut the pineapple into small pieces and set aside.


  • Heat a nonstick skillet (I used a cast iron skillet) on high heat; when hot add oil.


  • Add shrimp, onions, jalapeno and garlic and cook a few minutes until just opaque, 3 to 5 minutes; set aside.


  • Add the rice, pineapple, butter and wine...stir a few times until butter is melted.
  • Add soy sauce, pepper flakes and parsley stir to mix all the ingredients and cook another 30 seconds.


  • Enjoy!
