These Sweet Korean Thighs are sooooo delish, quick AND easy. I think I had this put together in just a matter of minutes. For the cauliflower rice she talks about I just bought a bag of riced cauliflower and it made it so much easier. So full of flavor and besides, if have any leftovers they are great re-heated or even cold the next day for lunch. It works great for a fantastic Paleo dinner.

Turkey Chili Taco Soup

I know that Spring is almost here, but I had to add another soup. Are you like me and like soup all year round? I mean we drink hot coffee, right? This Turkey Chili Taco Soup is really quick and easy with basically dumping everything into the pot and letting it simmer. It is so full of flavor! I love it with some tortilla chips on the side. At only 225 calories a serving it is a great light soup.

Turkey Meatball Stroganoff

The Turkey Meatball Stroganoff is one that my son-in-law asks for over and over. I must admit I have cheated and made it even easier by using frozen pre-made meatballs. I have done it both ways and they are equally good. Just depends on how much time you have. It is creamy goodness that has turned out amazing each time using the Instant Pot. We also enjoy them over rice or noodles. Whichever way you choose you will not be disappointed.
