Hi friends! How was your weekend? Mr. Tom and I got out for our drive which is turning out to be the high-light of the week. We looked at some land, had the sunroof open with a beautiful warm day and drove through McDonald’s. We really need to find a new fast food restaurant to go to. Mr. Tom has an addiction to their fries and that is why we always seem to end up there.

A quick stop at Home Depot and I was able to get some flowers and fill the pots on my back patio. Looking forward to more varieties coming out so I can plant my hanging baskets and fill the large flower pot in the front yard. I am itching for a shopping trip so bad and it’s getting worse by the day! I am seeing lots of stores and businesses opening in other states and I can hardly wait for it to happen here.

Triple Chocolate Oatmeal CookiesYesterday, Mr. Tom and I baked some cookies together. I love a chocolate chip oatmeal cookie and after checking out the pantry realized that I had three different flavors of chocolate chips. Why not add some of each? We did and they are so good! So Triple Chocolate Oatmeal Cookies were born. With a little touch of cinnamon these will be your new favorites.

Triple Chocolate Oatmeal CookiesWe used semi-sweet, dark chocolate and white chocolate chips. You get a yummy combination of chocolate in every bite! I really love the white chips in there because it adds just an extra sweet that is just right. Don’t like all three flavors? Just use what your favorite ones are.

Take these out of the oven when they look like they are just shy of being done in the middle. This will ensure that you have a moist cookie. If you like a crunchy cookie go ahead and bake them longer. Just remember, they get a little more done as they are cooling.

Triple Chocolate Oatmeal Cookies

Triple Chocolate Oatmeal Cookies

Ingredients
  

  • 2 sticks room temperature butter
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups oats (quick or old fashioned)
  • 1/2 cup each of semi-sweet, dark & white chocolate chips (more or less to taste)

Instructions
 

  • Heat oven to 375 F
  • Cream butter, sugars, egg & vanilla together.
  • Add baking soda, salt & cinnamon; give it a good stir.
  • Add the flour and oatmeal; stir to combine.
  • Stir in the chocolate chips.
  • Drop by spoonfuls (as small or big as you want) onto your baking pan, lined with baking mat or parchment paper.
  • Bake for 10 -14 minutes depending on the size of your cookie.
  • Under bake for a softer cookie and a little longer for a crispy cookie.
  • Cool and Enjoy!!!
